Nutrition Services leaders earn produce safety certification (Posted 04/26/16)
Nutrition Services Director Laina Fullum and Training Implementation Kitchen Manager Katie Frink were selected by the United States Department of Agriculture (USDA) to attend a week-long course offered by USDA Food and Nutrition Service and Agricultural Marketing Service. Ms. Fullum and Ms. Frink completed the course and earned produce safety certification as part of the USDA's Produce Safety University training.
The goal of the program is to help school food service professionals identify and mitigate food safety risks in fresh produce that originates from a range of sources, such as traditional suppliers, local farms, and school gardens. The course covers all aspects of the fresh produce supply chain, from growing and harvesting to storage and preparation. Ms. Fullum and Ms. Frank attended lectures and labs and visited a produce farm and two produce distributor warehouses to enhance their awareness of food safety throughout the farm-to-fork process.
